It is no accident that our baguettes are so authentic. Good French bread has as its base the same simple ingredients we use in our classic Scaletta formula: flour, water, yeasts, and salt. From the very same dough we make our Scaletta bread we get a very different result. The same clean taste but a light, airy interior and a crisp, thin crust. The addition of steam in the proofing process (when the loaves are placed in a steam-box) helps to create the lighter texture. Finally, pan baking provides the baguette’s thinner crust. Skill and technique is every bit as important as ingredients. Certainly this is one of the great breads in the canon of baking. Its uses are endless but caution: you may find one baguette lasts for only a single serving, so get two!
